Illy espresso. Illy carefully chooses nine types of Arabica coffee
beans from across the globe for its award winning espresso blend.
By employing exacting standards, Illy’s selection process helps
ensure consistent and pleasant taste results. The beans are carefully
selected using electronic sorting technology, rejecting unripe
or fermented beans that can ruin an entire batch. After a slow
roasting and air cooling process the coffee is packaged in unique
pressurized tins with nitrogen. This exclusive aging process is
superior to air packing or vacuum sealing because it dramatically
enhances the aroma and aftertaste by letting the beans mature
without becoming stale. Only after this rigorous selection and
roasting process does the coffee meet the highest quality standards
and receive the Illy label.
